When we recently ditched cereal from our mornings, healthy muffins entered.
I'm gathering quite the arsenal of muffin recipes and this one has become a favorite.
And with the pumpkin spice, it's seasonally perfect!
We love to use einkorn flour in our baking. It's an ancient wheat, that has been not been hybridized and is genetically different from today's conventional wheat. Studies have shown that many of those with gluten sensitivities can eat einkorn with no ill effects.
So, if we aren't baking paleo, einkorn will pop up in a lot of our baked goods.
